Based in Ross-shire, Highland amongst some of the Scotland’s finest distilleries, friends Peter Jones and Stuart Baxter first heard about the art of whisky chocolate pairing more than 30 years ago. A secret told to them in a hushed voice by an old distiller through the low-hanging cigarette smoke haze in their local bar "The Novar Arms".
Never shirking from a new experience they decided to try whisky chocolate pairing themselves and three decades later Chocisky (Chocolate For Whisky) was formed:
"We had tried most available products on the market and recognised there had to be more cost effective and lifestyle conscious way to indulge our passion for fine whisky and chocolate pairing. Using our own experience and supported by industry experts (including chocolate gourmets) we have identified a disparate range of chocolate with flavours and cocoa intensity perfect for pairing".

Stuart Baxter (54) was born in Paisley and has lived in Highlands since 1976. Stuart attended Invergordon Academy then worked in the oil industry as a welder before a career change in the 90s. Today he works for Local Government and married twenty five years with two grown up daughters. His interests include whisky chocolate pairing, fly fishing and wine making. His favourite whisky of the moment is Teanninich.
"It’s the spicy cinnamon notes I really love and when paired with the Chocisky Highland chocolate you really get a punch of those hidden nutty flavours, beautiful".
Peter Jones (56) was born in Swansea South Wales and moved to the Highlands in 1988, He attended Penlan Secondary school and Connahs Quay high in North Wales. His career in Industry has spanned over 40 years in the Oil and Gas sector working globally. Married with a total of five children he has Travelled extensively throughout Africa and South America and helped source our chocolate. His main interests are Rugby Union with his favourite pastime being Gold panning. His favourite whisky is a Lagavulin 16yrs.
"I love the peat smoke but I was missing a lot of the underlying notes. When I pair with our Chocisky Islay chocolate with its woody olive flavours and high cocoa content it smooths out the sometimes medicinal notes and I can easily taste the sweetness and sherry too, nice".
